On-Plan Shrimp Scampi

Shrimp Scampi on plan!

Ridiculously easy recipe and adaptations.
(recipe adapted from ‘Now Eat This”

Broccoli
Shrimp (peeled, devained, washed and dried)
Seafood seasoning
Garlic LOTS (recipe suggested 8 cloves, I used more)
Lemon Juice
Corn Starch 1 TB
Chicken Broth 1 1/2 cups
Cooking Spray (i use coconut oil spray)

Preheat oven to 450.

I cooked a ton so 4 lbs of shrimp and 2 huge bags of broccoli.
-Roast both the broccoli and the shrimp on separate trays in the oven sprayed with some cooking spray and coated the shrimp with some seafood seasoning.
-Starting first with the broccoli as it needs more time but you could do it all on one tray depending on how much of each you have by adding the shrimp half way through.

(You’ll likely need about 20 min or so for both items to roast/be done but DO NOT over cook your shrimp!)

– When complete I moved the contents of both my trays to a large skillet.

While the broccoli and shrimp were roasting,
-In a sauce pan heat your garlic in some chicken broth and simmer for a bit.
-Add the corn starch, lemon juice and chicken broth to another small bowl and stir. ADD to the broth/garlic pan and stir simmer.

Pour the sauce over the shrimp and broccoli.

You can have it just like that

Rice
Grits
or your favorite side.
Parmesan Cheese

I made pasta for the boys and some spaghetti squash for me and the hubby. It was yummy!
