Gluten, dairy, and nut free fudgy brownies

Fudgy Brownies!
Gluten, Dairy and Nut-Free :)

Thanksgiving is coming up and I’m on the hunt for some great treats that aren’t totally over the top, but not “on-plan either. These were amazing! Try them!

– 2 whole eggs
– 2 oz chocolate, unsweetened
– 50g cocoa powder
– 35g coconut flour
– 250g honey
– 1/2 tsp salt
– 1 tsp vanilla extract
– 100g coconut oil
– 1 tsp espresso powder

Preheat oven to 350° and line a 9×9 baking pan with parchment paper. Spray with non-stick spray.

In a medium saucepan, combine coconut oil, cocoa powder, and unsweetened chocolate. Heat oven medium heat, whisking until mixture is smooth and no lumps remain.

Remove from the heat, stir in the honey. This should cause the mixture to slightly thicken. Add in the eggs & vanilla. Mix well.

Add in coconut flour, salt, and espresso powder. Mix until no dry pockets remain. Pour into prepared pan and bake for 20-23 minutes. *Recipe adapted slightly from “jaysbakingmecrazy”
