Cream of Rice pancakes

Cream of Rice has been a staple in my diet lately, and I have been wanting to try it in a pancake form so I came up with these!

These are great for breakfast on-the-go. In fact, I am making several batches to take with me to the conference this weekend.

Ingredients: 

42g Cream of Rice (subbed for my 40g of oatmeal)
1 whole egg
3 egg whites
1 cup of water

I love sweet and salty, so I also added:
sea salt (optional)
1 tsp vanilla (optional)
1 packet of Stevia (optional)

Bring water and sea salt to boil in small pan. Add Cream of Rice and reduce heat to medium/medium-high, and continue to cook for 3 minutes.

Whisk in vanilla, Stevia, egg whites, and egg, rapidly.

Transfer onto pre heated skillet (sprayed with non-stick spray) and “fry” on medium high for 3-4 minutes on each side.

These are not very sweet, which I like. Top with sugar-free maple syrup, or enjoy them on their own!
