Baked Oatmeal Casserole and Baked Oatmeal Squares

I love this oatmeal casserole bake. Quick and easy. Just cut it into squares, portion for the week – grab n’ go!

2 different recipes here:

Casserole:

(Adjust amounts to fit your plan)

– Rolled oats
– 1 tsp. baking powder
– 1 ½ tsp. ground cinnamon
– ¼ tsp. salt
– ¼ cup sugar free syrup
– 1tsp stevia
– 2 cups unsweetened almond milk
– 2 large eggs, lightly beaten
– 2 tsp. vanilla extract
– Fresh fruit (blueberries, strawberries, raspberries, etc.)

*You can use a combination of honey and sugar free maple syrup or ½ cup total syrup. I haven’t tried this with all honey.

1. Preheat the oven to 375˚ F and lightly spray a 2-quart baking dish; set aside.
2. In a medium bowl, stir together the oats, baking powder, cinnamon, and salt; set aside.
3. In a liquid measuring cup, whisk together the maple syrup, honey, milk, egg and vanilla.
4. Cover the bottom of the baking dish with the sliced fruit and then top with half of the berries. Pour the oat mixture over the fruit evenly and then add the liquid ingredients on top of the oats. Sprinkle the remaining berries over the top.
5. Bake for 35-40 minutes, until the top is browned and the oats are mostly set. Let stand for 10 minutes before serving.

Squares:

– 54g oats
– 3 egg whites
– 2 whole eggs
– 120g of fruit

Pan used was a pan that’s actually for little brownies but any type of pan would work.. Cupcake/deep dish, bread pan.

Oven on 350, layered bottom of pan with the fruit, then mixed my oats, eggs, splash of almond milk and added cinnamon. Cooked for 20-25 mins. Top with walden farms pancake syrup! Delish!
